I love shopping….for food!

Ok who am I kidding I love shopping in general. Though since eating healthier and trying new recipes I always want to food shop, especially the past 2 weeks. I think it’s getting that time of year that makes you want to cook and bake all the time! Plus I have so many different recipes I can’t wait to try!

This past Saturday I ventured to the Honest Weight Food Co-Op in Albany. It’s kind of out of the way for me so I don’t go often but I had an itch to go. I got up early Saturday and was there by 8am. It is located in an alley pretty much and has limited parking. Thankfully they open early so I missed the normal Saturday rush.

I was on a mission , mainly for bulk foods. They have a great choice of bulk grains, beans, different flours and other baking items, granola, honey, etc. etc. Then of course I found a couple of other random items I just HAD to get Smile

I picked up lots of grains and beans. Millet, quinoa, rice, wheatberries, red lentils and chick peas.

I found a new fruit I have never seen or heard of before and they are grown in PA! They are Kiwi Berries. I had to try them. They are like miniature kiwis, minus fury outside!

I picked up some local goat cheese from VT. I’ve heard goat cheese and mango = awesome combo.

Then for a dessert for the week day, these Vegan cookies. I have learned I shouldn’t keep these handy! I originally had them in a single serving size from Starbucks, then found this larger pack (thankfully not too large) while shopping. These are awesome, try them if you find them!

From the co-op I headed to my favorite new store, The Fresh Market to pick up a few more items. I could shop there daily it was $$$. But some things are worth going for…. or so I can justify In love

Now if we just had a Whole Foods near by and especially a Trader Joe’s (my all time fav), I think myself and many other local bloggers would be in foodie heaven! 

Yummy weekend breakfast!

First of all…. I have finally discovered Windows Live Writer! What a gem this is!

Second,I still have so many posts I need to catch up on from my down time. If you think you see many posts from me the next few days….. well you probably do!

Anywhoo, back to my post! This weekend I made a new breakfast for myself. Hubby would NOT like this and looked at my like I had 3 heads when I made it.

 

Potato Pancakes with Avocado mash and egg

  • 1 baking potato
  • 1 onion
  • avocado
  • egg
  • salt & pepper to taste
  • olive oil

 

You may notice I do not have exact measurements here. The recipe called to make 4 servings, I was making one so I adapted as I went along. Fairly easy though!

Grate your potato until you have enough to form a pancake a size of your liking. Place shredded potato in between paper towels and squeeze out all water. Place in bowl and grate some onion (to your liking) in with the potatoes. Add some s & p and a dash of oil and mash all together.

Meanwhile heat some more olive oil in a pan. Form your pancake and fry on both sides about 15 minutes until done. Once done cook 1 egg in same pan.

Place pancake on plate. Smash 1/4-1/2 an avocado and spread on top of pancake and top with 1 egg. Voila! It was soooo yummy!

Talk about fresh sprouts!

Today I stopped by my dad’s to pick up my brussels sprouts he has been promising. See, my dad has a green thumb. It probably came from the years he worked in the greenhouses my grandparents had while he was growing up.  He can grow anything from nothing. He doesn’t have a big house, nor does he own a lot of land but he has the most succesful garden I know! It’s October and he still has a ton of green peppers, tomatoes, eggplant and even strawberries still growing! By the way if you don’t know we live in Upstate, NY and it’s starting to get cold!

They might not have been the biggest brussels sprouts but they were home-grown with love!

Yes, the stalk was so big my dad had to get a hand saw to cut it down!

Tomorrow will be my first of many sprout recipes. Unfortunately I will be eating these sprouts separately. This is the different between the store-bought…… and the homegrown with love.

Maybe I’ll have to find a special recipe for these little guys since they can’t compete with the big guys. Hrmm wheels are a turning now….. stay tuned 🙂

New favorite breakfast!

If you remember in a previous post I mentioned some local food finds I had purchased. One of them being this muesli mix, Mu Mu Museli  http://www.mumumuesli.com . The ingredients caught my attention with all the yumminess it contained. On the back they provided a variety of ways to prep and one was cold. Perfect!   My mix included:

  • 1 cup Muesli
  • 1/2 cup milk
  • 1/4 cup yogurt (I used Stoneyfield Farm organic vanilla)
  • 1 grated apple (I used a Honeycrisp!)

Mix and let sit for at least 30 minutes OR overnight.

Oh my, this. was. heaven! I made it literally 2 second before I walked out the door and then left in fridge at work for an additional half our or so. Total time about 1 hour. Perfect breakfast!

The reasoning behind the madness

I started my blog wanting to be ready to be serious about blogging. It was more of a jump cliff dive into the blogging world. When I started FATastic Foodie, I thought I had THE name. I started a Twitter page also and go pulled into the blogging world fast, not really knowing what I was doing yet. As I started to meet other bloggers and was asked “which blog is yours” I felt almost embarrassed to say FATastic Foodie. That got me thinking…

Back when I did Weight Watchers, I  met many great friends through the Weight Watchers message boards. We also all referred to ourselves  (and each other) as “fatties”. It’s ok when you are fat and call yourself fat, right?  At the time, it didn’t seem like a big deal. So when I came here to start blogging, initially FATastic Foodie seemed to be a perfect name…. or not. What kind of positive thinking is that?

I  am proud of myself to realize the negative and change it to a  positive. I think this is a huge step in the journey I have a head of me.  It really made me do some thinking of who I am, why I am here and what do I have to offer to others.

Why My Fresh Sprouts you ask? I love brussel sprouts! I originally tossed around a couple different “sprout” names for my blog and finally decided on this name last night with the help of my hubby. You can bet there will be lots of posts about sprouts to come soon.

And I don’t want no see no sad faces to brussel sprouts. I promise i’ll supply great recipes!

 Now back to the blogging world after a brief hiatus! I took the time to make some changes and now have to catch up cliff note style of the past few weeks 🙂

It started with issued with my photos. Still issues with photos and laptop uploading. Now I’m trying to change up  my theme and a few things to a final setting and am having more issues.

(thankfully I don’t have many if any readers just  yet!)

Back to reality

…….well tomorrow anyways. Tis the end of another vacation. I always feel as though I need a vacation from my vacation but not this time really. We normally are home late the night before we need to go back to work. This time, we had a normal weekend to putz around and that’s exactly what we did.

*side note* still need to find vacation pics.  They are still on my camera, but it won’t let me upload them to this computer since hubby already did but then put them on a memory stick which I need to find ASAP!

Today was really productive lazy (who am I kidding) Sunday. We ran a few errands in the am. I was up real early around 4am with a tummy ache. My stomach still is not right from vacation food and I really did not over indulge… really! That started the day off not so fun. Brad was up early also so we went down to the mall where he works to check in on a few things and pick up a bonus check. While he was doing that I was shopping and spending that bonus  check. Cha-ching! oh and he works at Dick’s Sporting Goods which is awesome for discounts! Today though I attacked sales racks that were 50% off the lowest price and made out with some killer deals. Like these white cropped sweats and t-shirt made by Under Armour. If you know the brand you know its great quality and $$$$. Well these gems cost about $25 together! Score!

I also picked up a pair of the softest, nicest shade of blue yoga pants, but I’m already wearing them 🙂

After coming home and napping I FINALLY cleaned out the fridge and went grocery shopping. My tummy will thank me soon! Walking into the store I got hit with Fall fever! Pumpkins and gourds everywhere! I picked up these cuties to start a center piece for the table.

Then it was time to attack the produce! I really wish (again) I went to one of the many Farmers Markets on Saturday, taking advantage of them while I can. At least the store today was full of fresh, good produce. I swear at least half of my bill was fruit and veggies, see for yourself!

Bananas,pears,apples,kiwi,brussel sprouts and avocado’s galore! Not to mention the other items I have in the fridge like spinach, peppers, tomatoes and cucumber. Yummm.

Dinner tonight was just a quick pot of pasta. Something I don’t have often but it hit the spot. I think Jack was in the mood for pasta too, what do you think?

Pasta to me is a comfort food, best to eat in the Fall and Winter. Today was such a nice Fall-ish day and I think that’s why it worked. Plus it was easy and again we were lazy! Next on my list to make this week is Chicken Chick Pea Chili mmmmmm photos and recipe to come soon!

Now it’s time to make lunch for tomorrow and head to bed in attempt to face a Monday after vacation. Starbucks Monday anyone?
